Artificial aging of wine by using electricity is a really great idea. The wine is run through an apparatus that artificially ages it. Of course, wine purists are turning up their noses at the warm bouquet that electric current brings to cheap wines. But there are many cheap wines on the market today: If they can really be improved by this kind of process, then surely it’s something to experiment with.
On the other hand, the testing process seems a little bit suspect. After all, how many wine experts are there in China, anyway? They haven’t been drinking wine there for very long. Wine has recently replaced whiskey as the beverage of choice for toasting, and it’s especially appropriate because it’s a lucky color: RED! This isn’t the last that you hear about inventive wine processes coming out of China.
